We live in a busy society where everything is rushed, and now we are entering the Festive Season where most of us just want to unwind and relax.
For many people, unwinding will also have us revert to the habit of unhealthy eating:
  • Eating Out
  • Making quick (unhealthy) meals
  • Eating MORE
People use many excuses to fall into unhealthy habits (Health News), like:
  • Festive Season only happens once a year
  • My family is preparing the meals and they don’t serve healthy options
  • I can’t refuse my mom making me my favorite food
  • I don’t want to tell my family I am trying to lose weight…so I eat what they eat
  • The Festive Social Calender is so busy, I don’t have time to work out
  • Sweets are everywhere during the Festive Season!
Part of the problem is the idea that it will take too much effort to eat healthy and that healthy snacks may not seem to be attractive and tasty enough for our lazy days when all we need is comfort.

PECAN AND APPLE RECIPE

Ingredients:
  • Olive oil
  • 2 tablespoons butter
  • 1/3 cup packed light brown sugar
  • 1 cup Pecan Nut halves
  • 3 teaspoons orange zest
  • Juice of 1 orange
  • 1 teaspoon Dijon mustard
  • 1 tablespoon white wine vinegar
  • 3 tablespoons extra-virgin olive oil
  • Sea salt
  • Freshly ground black pepper
  • 2 medium apples, thinly sliced
  • Greens e.g.
    • Belgian endive, separated into leaves
    • Mixed greens / arugula / radicchio
    • Salad greens
How to prepare
STEP 1:
  • Lightly rub a cookie sheet with olive oil; set aside
  • Heat a large saucepan over low heat; add butter and sugar. Simmer a couple of minutes, stirring occasionally, until sugar has completely dissolved and the mixture darkens.
  • Gently stir in pecans until well-coated
  • Transfer nuts to cookie sheet; separate them into one layer
  • Allow to cool so caramel hardens.
STEP 2:
  • Combine orange zest, orange juice, mustard, vinegar, and oil in a large salad bowl; stir well with a whisk – you want a nice balance between the vinegar and the oil
  • Season with salt and pepper.
STEP 3:
  • Add apples and greens to dressing
  • Break cooled pecans apart; add half to bowl
  • Toss mixture gently with your hands
  • Top with remaining crumbled pecan
Divide among 6 plates
P.S. This salad only has 300 Calories per serving and brings fibre and Calcium into your diet.
